May non-experts reply? Call Ginger or Yooji's on Seefeldstrasse (ZH). Ginger is a super little Japanese restaurant and I'm sure they'd be happy to reveal their sources/sauces. Yooji's has a small shop next to the restaurant, maybe you could pick up what you need there?
