Hi,
I have given up making paneer at home due to lack of time, I use amul paneer now. although it had completely disappeared from the Indian shops last month or so, it was back last week. I have now got 6 packs safely in my freezer.Anyway here is the recipe for lovely paneer at home.

Boil whole milk ( the co op one is fine)
As soon as the milk starts to rise add a few spoons of white vinegar and take it off the gas.
Let it cool for 5-10 mins. stir it occassionally not vigorously till you see the water separating from the curdled milk.
Drain it in a muslin ( thin cloth and hang it to drain excess water while still hot.
Let it drain for 5-10 mins.
take it down and press with the cloth on a flat surface using another flat thing like a chopping board ( this is to drain excess water but dont be over enthusaiastic as it may become too dry.
Weigh it down with some heavy thing like a pan full of water or so for about 20 mins.
Voila paneer is ready. cut it into cubes marinate or store in freezer for further use.
By the way I treid using Serak, looks and feels good but doesn't taste the same. My husband immediately new the difference although I didnt tell him
