I like to bake too and ran around a bit to find ingredients for Christmas cookies.
I found packed brown sugar at the central coop across from the bahnhof. It is in the baking section and it is called "cassonade" and it tastes strong and molasses like.
Across that aisle on the top shelf, you will find molasses (melasse) (that actually substitute well for pancake syrup).
I found chocolate "pieces", not chips, at the coop on the bahnhofstrasse, in the department store basement. They are the same size as chocolate chips but they are little 3d rectangles instead of drops! Anyway, they baked well in chocolate chip cookies.
