I neither ski nor play volleyball, but I can vouch for the fact that there are indeed beach volley ball courts in Lausanne (by the lake at Vidy) and even a beach volley ball tournament each summer:

As you say, it isn't quite a real beach.. but sand-filled courts next to the Lac Leman are not a bad substitute! In fact, it seems to be a very popular activity as the courts have always been full when I've gone past them during the summer evenings.
