Mike - Can't make it to the 'Cheddar Do', but I have a question. One of the cheeses I miss occasionally, is the sharp or extra sharp cheddar in the US. Lots of artisan cheeses in Calif...but our cheddar is still orange.

Is there a reason for the color? Am I crazy to consider it real cheddar?
