Definitely Hiltl (oldest veg restaurant on the Continent, 1898)!
It's off Bahnhofstrasse (tram stop Rennweg/Augustinergasse, lines 6,7,11,13), Sihlstrasse 28.

They even organize cooking courses.

Vegetarianism is pretty widespread in Switzerland, seems every restaurant I've been in has at least one "Vegi" dish on the menu.
