Don't know that many veggie restaurants in Zurich but I remember a particularly good veggie 'bistro' opposite Quaglino's, street name evades me but its just near the opera house & Stadelhofen station.
If you're ever in Basel, there's a veggie restaurant called Oliv that I heard is pretty fab.
