My question is how do I go about paying AHV and Tax on my earnings for this job in Switzerland. Will it be a case that I have to wait and pay it at the end of the year or is there other ways I can do it?

I leave for this job on Wednesday so would like to sort it before then. And obviously I will tell the RAV office that I have found a job
Contact your local AHV to obtain the "self employed" status.

You will be taxed on your net income after deducting travel and other costs.
