| Hi nksyoon,
Yellow Fin from the Indian Ocean is perfectly fine for Sushi as long as it has been caught, frozen immediately, stored and transported under strict guidelines and required temperatures. I have a friend who is in this business. | |

While there is not a set standard for qualifying fish as sushi grade, the difference is whether or not the fish has undergone a parasite control process. This involves freezing at particular temperatures for particular lengths of time. The colder the freeze, the less time required to freeze it. Without this measure for controlling parasite, it shouldn't be considered sushi-grade.
I can't imagine parasites adding any nutritional value... but I've heard they can get very nasty in a human body. So please beware.
