Unfortunately, every Kanton has different regulations. But in general it can be said that:
The administrative part is pretty simple. As long as you don't serve alcohol, you don't need a catering certificate (Wirtepatent

The difficult part is finding a place to set your truck up. Renting a private spot is the easiest way. In most Kantone, you won't need an additional permit, but some do require one.
But I'm guessing you want to set your truck up in the city, where there are lots of commuters. If you want to set your truck up on public grounds, you will always need a permit. You have to contact the responsible police department and apply for it. However, the availablity is limited and there is probably a waiting list.
But as mentioned, I am no professional. Contact the commune
or city you're interested in working. They can give you all (correct) information.
