Urban Cooking School

Hi,

I have been in Switzerland for just over 2 years now and have decided to set up a new private cooking school in Au/Wädenswil.

A short introduction, I am an Australian cook with over 25 years experience in kitchens and farmers markets in Sydney. I have been doing some private lessons for friends over the last 2 years which have been well received, so my wife and I have invested in a class room that can cater for 10 people in a class or up to 20 for a corporate event.

I want to share my knowledge with anyone that wants to improve their cooking or just have fun for a few hours meeting new people around food as the theme.
The classes are set in a relaxed and fun atmosphere, with themes from Italian,Asian,Beginners, Low GI and many more. All classes are conducted in English.

I am offering mainly day classes for those with time on there hands looking for some fun and a chance to meet like minded people, some night and a weekend BBQ class also. These of course are very flexible as I am still finding out what people would like, any suggestions are welcome.

A special offer for any English Forum member is a 25% discount any bookings until the end of October.

Just a quick update for our first cooking class.

We had 10 people for a corporate team building night, it was allot of fun some great Moroccan food was prepared by the team, the new classroom worked brilliantly with no teething problems at all..phew !!!!
Moroccan was foreign to nearly all of them, some had eaten it but never cooked it before. They had a great night, all the food was eaten , a few drinks had but more important they had a fun 4 hours to get to know each other in a relaxed atmosphere.
The smell of all those great spices still lingers in the air..Love it.

The classes are now up and running with allot of interest. I have now conducted 5 classes from Vegetarian, Italian and Moroccan and all have been allot of fun for the participants and me also. Corporate team events are also scheduled for the coming months also.

The classroom and classes are very relaxed and last about 3 hours. We offer one on one classes, social groups and corporate events together with the scheduled classes offered.

Just wanted to say that a group of friends and I spent several fabulous hours with Peter this afternoon to celebrate two birthdays. We all had a hand in preparing the Moroccan menu. The instruction was great, and the resulting meal was even better.

I am looking forward to going back for another class.

Hi,
I can do courses in the evening that is no problem.
I am happy to do any class you want to do, I am flexible on the schedule.
As I am just getting the business off the ground it might not be a full class.

New class dates now up for October through to January.
Many day time and night classes added and we can plan a class to suit you.
We run a one on one class and up to 10 in a class, social groups and birthday parties are great fun and corporate events are really taking off.

End of year parties are coming up so how about a cooking class with a few drinks, lots of laughs and of course fantastic food.

Now that Autumn is definitely here in Zürich I have been making allot of hearty stews to keep me warm inside, nourish me against the oncoming cold weather and generally because I love a great stew so with all that in mind I want to share one of my favourites.
Moroccan Chicken and Apricot Tagine. Its so easy to make and only takes about 1 hour to prepare and cook. Team this with some wonderful Cous Cous and you surely are onto a winner...

1 small chicken cut into pieces
1 tsp ground ginger
1/2 tsp ground cinnamon
4 tbs olive oil
2 brown onions, thinly sliced
500ml chicken stock
1/2 tsp saffron threads
3 cloves garlic, crushed
1 tsp paprika
1 tsp ground cumin
1 tsp ground coriander
300g dried apricots
2 bay leaves

Method
Pat chicken dry. Combine ginger and cinnamon and rub over the chicken. Heat half the oil in a pan over medium heat and cook chicken in batches until golden. Remove and set aside.
Add onion to the pan and cook for 3-4 minutes until golden.
Meanwhile, add the stock to a separate pan and bring to the boil. Turn off heat and add the saffron.
Infuse for 10 minutes.
Add garlic and spices to the onion and stir to combine. Return chicken to pan and add apricots. Pour in half the stock and add bay leaves. Cover and bring to the boil. Reduce heat to low and simmer for 15 minutes
Use the remaining stock for the cous cous

Enjoy with a nice bottle of red wine or 2 !!!

Well I am running a special Aussie BBQ class in January so why not treat your man to a session and reap the benefits. Aussie BBQ class for the 20th January is now booked out so due to allot of enquiries I have scheduled a new class for Saturday 7th February at 3pm.

The class will run for 3 hours and we will be be using Lamb, Pork, Chicken, Chorizo, Prawns, Halloumi Cheese to create wonderful sandwiches, salads, starters and mains.
