(How many UK supermarkets will carry Hors, or Rabbit?)
Maybe not many supermarkets, but you can get both horse and rabbit at delicatessen and speciality butchers at moderate prices.

What is rarer though is to find restaurants that serve them.

Pass the Bear and rise a Marmot.
Bear meat used to be common in Bern.
The Bear pits would breed bears, as the public expected to see young ones every spring. So they had lots of them. And since they couldn't keep all of them bears routinely got slaughtered, and the meat sold.
