Last I knew the Movenpick hotel restaurant at Ouchy did this, but it was a while ago, perhaps check beforehand.

for really fancy the beau rivage-very yummy.
cafe des aves or grancy otherwise- i love grancy but i don't think the brunch is amazing- just normal.
best brunch ever is when my hubby (from brittany) makes crepes

I also go for café grancy or la couronne d'or! the latter is less famous but very good and with fewer people
