Fish and Chips in Basel. At last.

In with all the other exotic cuisines available at Markthalle.. there's now a young fella making fish and chips.

We went there today and they were seriously fab.. the fish was superb..hand prepared and cooked to perfection.

Re: Fish and Chips in Basel. At last.

Thank you, but many people won't know where the Markthalle in Basel is, would this tram stop be near your fish & chip shop?

http://map.search.ch/basel/markthalle-station-stop

Added,
I have now found out that the Markthalle is about 50 meters east of this tram stop, on the north side of the road.

.

Re: Fish and Chips in Basel. At last.

You mean real fish and chips, that is cod or haddock served with malt vinegar and wrapped in newspaper ?

Re: Fish and Chips in Basel. At last.

I'm going to try this Thursday evening (event created on FB Basel Flouncers if anyone wants to join). Some friends have already tried.

It's not cod nor haddock, but at least it's not pangasius (which is what places like Paddy's uses). At the moment, it's either bass or rose-fish. Also, they don't have malt vinegar for some reason, it's some other kind of vinegar. However, I've been told it's tasty enough for the 15 CHF cost.

A thread about food in Basel.
Somehow I knew Adrian would be all over it in seconds.

Re: Fish and Chips in Basel. At last.

So.. to set your expectations.. it's one bloke behind a wooden tressel with 2 frying pans and an 'oven' for the chips.

But.. he's hand coating fresh fish in a great batter (Bass today... as good as any cod/haddock I've had)... the chips are pretty good considering what he's working with.. there were 'smashed peas' (he promised marrofats in the future) and a kitchy set of condiments. All wrapped up in a big paper cone with a wooden fork. Brilliant.. especially for 15chfs

Of course .. it's not a 'chippie'.. but we can dream.. we can dream

Re: Fish and Chips in Basel. At last.

It definitely isnt Bass, i had a chat with him few days ago. The sign suggests 2 types of fish but its actually 1 "rosebarsch" and his english translation underneath is bass which isnt correct.

Fair enough.. (and if you're the Rob I think you are.. I know you know your fish :-) ).. but .. it did taste great.. and had a 'cod like' consistency.

Re: Fish and Chips in Basel. At last.

few people had plaice yesterday, all noted the muddy taste, this of course all depends where they are caught but in general its open water and not in estuaries.

He has to pan fry the fish as its not allowed to have a deep fryer in the markhalle.

home made chips would be a great bonus but you cant expect everything and the guy hasn't been open a week yet, lets give him a chance before driving in the death stake

Do you know what other fish he had yesterday, or even if he always has a choice? I'll probably pay a visit next week, but am not a fan of plaice at the best of times, and it seems an odd choice to do in batter F&C style.

But beggars, choosers, etc. Gotta be better than the mushy stuff that's all I've ever seen on those rare occasions in the past when I've been tempted by Paddy's offerings.

It was just plaice. Seems to just have a fish of the day, so I guess it's pot luck.

There's contact details on his website, so I guess you could ask him what's on in the next day or so.

IrishLocal has no particular reputation at present
Re: Fish and Chips in Basel. At last.

Was a bit underwhelmed by it to be honest.

Fish was OK, but chips let it down.

IMO, he would be better off doing some type of a fish sandwich on a really nice bit of bread, with nice fresh salad and a good homemade mustard/mayo type combo with homemade wedges or some such on the side as an extra.

Would be easier for him and probably appeal to more of the people in the Markthalle for lunch.

Re: Fish and Chips in Basel. At last.

I only tried it the once and it was enough to stop me trying it again unless I see some changes. I did feed back to him my concerns, so it'll be interesting to see if he's willing/able to improve.

He's still got the stall and seems to be ticking over. My issues were ... soggy french fries (worst combination; they should be vinegar soaked chunky chips or crispy french fries) done in the oven, the wrong vinegar (he had some weird French stuff he got cheap; I told him even Coop sells sarsons), mushy peas which were just tiny peas smacked with the back of a fork, and ... the fish. It was not a nice chunk of white fish, plus the batter was soggy and the fish cooked for too long. It's hard to get that right without a deep fat fryer at least, and he says he's not allowed one so has to pan fry, which means the fish takes too long to cook and dries up. Why the batter was also soggy I don't know.

It seems a bit unfair - he's surrounded by Thai stalls with woks on the go but can't deep fry. Maybe some kind of acti-fry thing would work but that still leaves the chips to sort out.

Without any changes/improvement I don't see him lasting long. It's a shame, but fish&chips really requires dedicated equipment and good quality fresh fish. I don't think Basel's population can support one.

---you forgot the newspaper wrapping, I always found that F&C's wrapped in the sun never tasted as good as those wrapped in the Lancashire evening telegraph.
