Hotel Central has a nice quiet bar with lots of seating. There is a lounge section that opens after 18:00 but there is plenty of other seating. There is also a piano player but it's not intrusive and you can sit well away form him if you want. It's ideal for informal meetings where you need to hold conversations.

Best of all it's only a few minuets from the HB, just cross the bridge over the Limmat and you are there.

There's the James Joyce pub in the Pelikanstrasse just off the Bahnhofstrasse near St. Annahof. It can be quiet, very in fact, if the bankers are counting their money before returning home to the little woman. My brother who is a beer man down to the soles of his shoes always insists on going there when he visits me - he says they serve the beers best. The best beers served best...

If you want a nice relaxing bar try Simplon it is a cocktail/ jazz bar. Amazing selection of Whiskeys , friendly staff and great food.

they make a point of the bar not to be too loud.

it is less than 5 minutes from the HB, as you walk from HB up the bahnhofstrasse it is the first left hand turn opposite the Saint Gottard hotel.

I would second the Lion pub. It's more a safe bet than the others. It does everything quite well and serves some good food. (Burgers, fish and chips etc) If you did want to go a bit more upmarket and guarantee being able to talk then I can really suggest the Widder Bar. It's attached to the Widder hotel, but has a separate entrance as well. I like this bar very much, but it is quite pricey. (But you get what you pay for!)

I ended up going to the Au Premier bar in HB. Quite a nice place with a good view over the Bahnhofsstrasse.

The Hotel Central has a nice bar with a pianist, but he doesn't play loudly or obtrusively and you can easily settle around one of the corner tables and sip your choice of drink from the well supplied bar. A very civilized place two hang out. Rarely full and always quiet.

I don't know if the James Joyce pub still exists but that used to be a nice place.

The Au Premier at Hauptbahnhof has a nice bar (on the 1st floor, take the lift next to the pharmacy). Get a window table and enjoy the view.

Hotel Storchen has a very nice bar, but a bit on the expensive side. But if you like places with a lot of history and atmosphere, definitely worth it.

Another nice one is Sein (not the restaurant, the bar next door). On Schützengasse right by Hauptbahnhof.

+1 for Wider Bar. There you will find the style (and the quiet environment) that you were looking for.
