Go to your local butchers and order 1/2 or a whole pig, that way you can dictate to the butcher how you want it prepared.

This is also a cheaper way to buy meat because you will get the choice joints as well as the cheaper (crackling rich) parts. Pork freezes very well

Yes, I went to order 1kg Schweinebauch mit Schwarte (pork belly with rind) at our little neighbourhood Migros and collected it two days later. It was labelled Schweinebrust or something similar. It cost CHF17 per kg.

Carmelo's is really cheap. I paid CHF12 for 1.2 kg. Bargain!
