Re: Ethnic Grocery Stores

Paniermehl can be widely found at any supermarket. Though, I find the texture too fine and lacks flavour. A better (and cheaper) option is to whizz some stale bread in a food processor and voilà!

Speaking of breadcrumbs, the Korean and Japanese often use Panko crumbs in their cooking.

Panko crumbs, along with a good selection of other Korean and Japanese groceries, can be found at:

Yumi Hana
Schützengasse 7
8001 Zürich
Tel. 044 211 57 57

This is actually a small restaurant close to Zurich Hauptbahnhof (just off Bahnhofstrasse), and the grocery section is located at the back.

I don't wish to jump the queue and answer in Nathu's place (or Nanda), but there are a few things you can use to tenderise meat. It is a bit difficult if you do not know what it is called in English ...

The most commonly used ingredient is bi-carbonate of soda, which is called "Natron" or "Back-Natron" in German. You can find this in the baking section of your supermarket, and they are often sold in small sachets.

Though, foodies at heart would not use bi-carb to tenderise meat. It often turns the meat into a very soft, chewy texture which does not resemble anything close to what its normal state should be. Plus, the bi-carb also alters the taste of the meat. I am always bitterly disappointed when I go to a restaurant (especially Chinese restaurants) and find myself served with cheap meat that has been sitting in bi-carb and pretending to be fillet steak.

You should instead buy good quality meat to start with

Re: Ethnic Grocery Stores

I don't eat meat so I'm not insulted I sometimes put a bit Natron in my fondue but that's another matter of taste.

I doubt that meat tenderizers are that common in the average supermarket. I've searched for the most common German words but haven't found something at Migros or Coop:

Fleischzartmacher
Zartmacher
Fleischweichmacher
Mürbsalz
Fleischmürbsalz

Re: Ethnic Grocery Stores

Not read the full thread, would be nice maybe as a Sticky or if the first post / separate thread compiled the the data/info.

Mods, an example of what I've seen elsewhere: http://forums.highdefdigest.com/showthread.php?t=34675

Anyhow, a couple places I know but not sure if they have been mentioned here already:

Indian style shop at Manesse Platz: Just check the sell by data as some products were already past the dates.

In Alstetten there are a couple of places, a Thai Shop one street down from Badener Strasse (would have to look up the address) and a place along the road from 'Office World'.

In Oerlikon there are (were maybe) 2 Thai place out behind the station. One you can see from the platform one around the corner.

btw, anyone know where you can get Bombay Mix in ZH? I miss the products I used to get from Brick Lane maybe the man with a van travelling to London a few times a year can bring back a few kilos

I have a good recipe to make Bombay mix so maybe I'll have to resort to this but may have to substitute a few ingredients.

Re: Ethnic Grocery Stores

For anybody interested in Lebanese food, there is a very small Lebanese grocery called Rihan located just above Hottingerplatz at Asylstrasse 11. They have dried okra, grape leaves, semolina, pomegranate molasses, flower waters, and a few other ingredients that are difficult to find elsewhere. The owner's wife also will make Lebanese specialties to order (in case rolling hundreds of grape leaves with rice stuffing is not your idea of a fun four hours).

Do they carry Simmaq?

Re: Ethnic Grocery Stores

To be honest, I am not sure whether they carry simmaq, as I do not use it too often, but they do carry zatar (a mixture of thyme, simmaq, and sesame seeds) so I would guess they carry the former. You could try calling them on 043 538 36 11 to check. The owner speaks German, English, Arabic, and likely French as well.

For the record, I have no affiliation with the store or the owners, just happy to find it and I like supporting small business owners.

Re: Ethnic Grocery, Lugano

There's one at Via alla Valletta, the name is Asian Market...It's very hard to find as it's in a small alley with no real big sign, right across from the gas station.

here's a map

Thanks for all the places to shop! Now all I need is a great bakery (for croissants) and a good butcher and I'll be all set!

Hi!

Does anyone know a shop selling Korean food products (preferably around Basel or Zürich)? All the asian shops I know have mainly Chinese and Thai-Stuff.

Best
