mushroom recipes for main meal?

I have drifted into eating mostly vegetarian meals (no particular reason for it). I have two vegetarian meals that I like and cycle through a lot - chickpea stir-fry, and borlotti beans simmered with tomatoes and with cauliflower. But I need to branch out, and I am looking for a good mushroom recipe that is suitable for a main meal.

Mushroom risotto springs to mind. But what good mushroom recipes are out there for main meals? I would be especially interested if anyone has favorite recipes for the various types of non-button mushrooms like Chanterelles etc. Must broaden my veg cookbook. Thanks!

Hihihi- this is not a wild mushroom platter- it is a platter of non Paris type mushrooms grown commercially

Sorry about this, it is just that I grew up with a dad who was a bit of a wild mushroom fanatic, as those Swiss Jurassien of his generation were, most of them. No wild mushrooms about in Switzerland at the moment, apart form perhaps some morels, or Morilles/Morchellen as we call them here, or spugnole in Italian. Those conical ones with little holes, often served with pork fillet and cream and that cost a bomb (and btw must never ever be eaten raw, as they are poisonous raw). Soon it will be St Georges mushrooms, late April in the plain, late June up here where I have a big circle of them growing in our field. In French they are called 'mousserons de la Saint Georges' and the name mushroom derives from that word/Norman French. Nothing to do with mush...

Most wild mushrooms like ceps/bolets/porcini grow in the wild in late Summer and autumn, with all the other species of wild mushrooms like field mushrooms, blewitts, bluelegs, parasols, and 100s more.

Lots of books around on them and recipes. I like them with ham and cream, served with rice or on toast, or pasta- or indeed with pork filet. Will look up some of my books when I have more time. Been working in the garden all day, best go and cook that chicken.

You can substitute mushrooms for the meat in many recipes. For instance, we had Portobello 'burgers' for lunch the other day:

Portobello caps, marinated in basalmic, garlic and herbs, then grilled. Serve with all the traditional burger trimmings.

Or, add marinated grilled mushrooms to a whole-meal salad.

A few other favorites off the top of my head:

Mushroom stew - variety of mushrooms, sautéed with garlic or barlauch. Lentils, barley, leeks, carrots, fennel - whatever veggies you have on hand, cooked gently in an herb broth. (Or chicken broth if not strictly veg.) Top with dumplings or make into a pie if you wish.

Mushrooms, rapini, pine nuts, spring onions, sun dried or fresh cherry tomatoes - sautée quickly, serve over pasta.

Mushroom lasagne.

Stuffed mushrooms - remove and chop the stems, mix in pecans, spinach or barlauch, a bit of aged gruyere, plop this mixture into the caps, broil.

Mushrooms and artichokes in an herbed cream sauce over pasta or rice.


The possibilities are endless...

I just made mushroom risotto last night with a variety of mushrooms from a farmer's market.
I used a variation of a recipe by Jamie Oliver.

We like this Hugh Fearnley-Whittingstall recipe.
Is is like a risotto, but instead of rice, the recipe uses risoni which is very tiny pasta.
I took a photo of the recipe...click on the image for a better picture. Hope you can read it!

Here is my favourite in English. Those from the UK will know Carluccio, the gentle Italian giant who has done so many tv programmes on wild food and Italian cooking and who has opened a chain of Restaurants all over England:

Raymond Blanc is another UK cook, him from Besançon not far from me- and if you google Raymond Blanc mushrooms recipes, there are quite a few of them. He is also a frequent TV chef in England, and has also opened a chain of restaurants.

Re St Georges Mushrooms, if anyone in the Valais in interested, I know a huge ring that comes up every year in June, above the village of les Haudères- happy to give location as I have my own and can't get there anyhow

We sometimes do big open mushrooms grilled, with a filling of teriyaki marinade, grated Parmisan or Cheddar and coriander. Or Stilton, Worcestershire sauce and parsley. Lots of other combinations to experiment with. Can also be done in a dry nonstick frying pan (skillet) cook on moderate heat until the filing is bubbling. Yummy.

If you get parasol mushrooms (much later), then breaded and fried like Wiener Schitzel and use as the same.

Mushroom quiche... Many ways of making that, I like mine with the mushrooms reduced to a paste mixed with oven roasted garlic.

I tried the mushroom makhani recipe today- it was delicious! Thanks for sharing. I think that will enter my regular 'rotation'... I often make a simple mushroom stroganoff with onions and mushrooms with creme fraiche, served over rice or potatoes. Very easy and reliably good. I've also made a mushroom bourguignon similar to this one:

Just come back from holiday, so will start the hunt next week for the only 2 excellent edible available at this time of year- the elusive 'morilles' - delicious cooked with a little cream and a dash of pepper- served with rice or pasta. No need to hunt for the other- as we have a huge ring in our back field which gives many kilos every year of the delicious St Georges Mousseron- cooked as the above, or in risotto, etc. They should be coming up soon- about mid May the last few years.

The original post was about vegetarian main meals so maybe this is interesting too -
I could be behind the kitchen gadgets curve, but I recently heard about spiralizers. They are basically a gadget with a hand-operated rotating handle that pushes a vegetable like a zucchini or sweet potato into a specially shaped blade, and out pops vegetable spaghetti. Zucchini spaghetti seems like a great base for a mushroom topping.

Lurch is a respected-seeming brand that is available on amazon.de. I just ordered their 'Super-Spiralschneider' model 10301. It is one step up in expense from their basic models - the Spiralo and the Attila (after the less well-known Attila the Vegetarian) - but has better reviews.

Mushroom pastetli filling. Yum yum! Basically loads of whatever mushrooms you want, with herbs in a white wine and cream sauce.
