Looking for a great chilli con carne recipe please!

Hi


I've searched here for a decent "jar" of sauce - and settled on a packet of something or other from Migros, but it has not made a chilli con carne that tasted much like a chilli con carne - even after I doctored it with a myriad ingredients. I'm resigned to making it from scratch like I do curries...


So... before I go and dig around in my box of cookery books in the cellar and find out that the one I want is still sitting on a shelf in Derbyshire, could anyone post a really good recipe here please?

That said, it's a lot of effort. I now buy loads of packs of "chilli spice mix" when back in the UK and follow the simple recipe on the pack.

It's really easy; I tend to make a batch and freeze half. It tastes better after freezing!

750g mince
Two large onions
One or two red pepper
Two cans chopped tomatoes
One small can tomato puree
4-5 large cloves garlic
Can of red kidney beans
Chillis (to taste) or Tabasco
Paprika (lots)
One beef stock cube

Finely chop onions and very finely chop chillis

In a large pan - fry onions until brown
Add mince, chillis and garlic - brown
Add everything else
Simmer for an hour

Serve with rice, taco shells, or in a baked potato.

Optional: mushrooms, green pepper, sweetcorn (canned)

1kg meat

100g various dried chile pods (Ancho, NuMex, Chipotle, etc.)

several cloves garlic

2tsp cumin

oil or lard

Cut the meat into cubes, gring chiles and garlic in food processor.

Brown the meat in oil or lard, add chiles and cumin, and water or beer to cover.

Simmer several hours until liquid is reduced.

Definitely cumin!

I do a veggie chili using quorn mince, but substitute minced meat for 'con carne'

1 Onion
1 Green pepper
Chilli pepper
Chilli powder to taste
Paprika 1/2 tsp
Cumin 1 tsp
Tin tomatoes
Tin kidney beans
Tomato purée 1 tbsp

Coop kidney beans tend to have a sweetish taste which I dislike. Migros ones don't have this.

Depends if you're looking for something vaguely Mexican, or just spicey mince and beans in Tomato sauce. For the latter any one of dozens of easily found recipes will be OK, but for proper Mexican you need to start from a different place.

Like, what about using pork instead of beef? Or Turkey? And not all minced up so you can't tell what it came from.

Nice meaty chunks of fairly lean pork, marinated in sugar, salt and vinegar for an hour or two, then fried up to brown, then mixed in with your sauce.

which will include several types of dried chillis as suggested by Tom ( we generally include some Passila as well), pan-roasted to soften and peeled/deseeded if necessary, perhaps some ground up tortilla chips, peanuts, almonds, and a spice blend that will certainly include cloves and cinnamon, probably cumin, some other hot chilli depending on what dried ones you've been able to source, garlic optional (personally I prefer to leave it out with the Mexican flavours). Chop some onions and plenty of coriander stalk and leaf as well, then blend all the above to a paste, fry up in a pan with some oil or lard, extra liquid as required, then add the meat, some stock, seasonings.

Cook until nearly ready, then add tomato puree +- a bit of sugar, dark chocolate, extra seasonings to taste, cook until a good consistency is attained, then add more fresh coriander leaves right at the end.

Edit: Kidney beans? Well, if you must, but we generally cook them separately with chilli, perhaps a little celery, definitely onion, S&P, cooked up until it's almost a paste.

A bottle of Worcester sauce is a must in any kitchen to add a but of flavour into a dish like this.

Serve with a strong grated cheese and some sour cream will help as well.

Wrap it in a burrito. Fry the ground beef well, not just cook it, I usually brown it well. I put a tiny bit of cinnamon in it too, at times.

Where did you get the smoked paprika from? I've struggled to get it in CH. In fact my supply comes from Divonne-les-Bains, which isn't exactly convenient to get to from Schwyz!

Globus might have it (expensive). There is a Spanish specialty store in Zurich - the name escapes me, but it's near Langstrasse and Helvetiaplatz. Maybe a reform house or middle eastern type store.

Most meat here has little to no fat, generally need to add it.

No tomatoes, no beans, no onions. Any off those can be added to the finished product, albeit separately (and in the case of tomatoes, onions, and corriander, raw).
