| Another thing that I haven't been able to find yet in Switzerland is bread flour for using in bread making machines. It may be on the shelf with the other flour, but my German is very poor so I may be missing it. Then again, the bread here is so good that maybe people don't make their own bread?

Bread can be made with really any of the available flour types in the large supermarkets (i.e. Coop or Mirgros). I assume you are looking for a flour with a high protein/gluten content. In this case, your choices become rather simple. At Coop, look for
Halbweiss flour - at Migros, look for
helles Urdinkelmehl. Both are quite adequate for most any bread you are making. If you are looking for whole grain flour, then I would suggest a trip to the nearest
Reformhaus and select something with a high protein content (except Rye flour, which has little gluten in it). Protein is called
Eisweiss/protéines/proteine on packages. For a strong bread-type flour, look for those with percentages above 12%...
