Alternatives to baking parchment/greaseproof paper
I've not seen any baking parchment/greaseproof paper in the shops here and am in the mood to bake cakes.
Usually, I'd line my cake tins with baking parchment. Is there something like that available in Switzerland? I've not seen it in Co-op or Migros by the foil & cling film, which is where I'd expect it to be. Maybe it's hidden somewhere else in the store.
I've noticed cake tins in the shops here are silicon so possibly no-one uses baking parchment anyway.

Migros definately has baking parchment/greaseproof paper.
It's called "Backpapier" or "Backtrennpapier". It's in the section selling cling film, foil etc. and comes on a roll (yellow packaging, I think).Just ask one of the assistants and they'll point you in the right direction.

We have some of the silicon(e?) baking forms and don't like them. They don't really hold their shape very well, and the cakes end up with flat tops. Edit: They do work well for "traditional" 9 inch round pies and brownies.
Baking paper (Backtrennpapier) can be found at Coop and Migros, that's where Mrs. Tomcat buys it.

Have you tried the (new) silicon baking forms? I was skeptical to start with but bought one just for fun, and I must admit that I am impressed. No need for paper etc, nothing sticks, the cakes bake well which was surprising! Tere are silicon mats as well. http://shopping.yahoo.com/s:Bakeware...erial=Silicone

Thank you. I think I gave up on my searches too easily, concluding 'oh they've not got it' instead of inspecting the products on the shelf more closely. Now I can even ask where it is in German if I need to!
The silicon cake 'tins' worry me. I'd seen them in shops but walked on by thinking 'but silicon won't conduct heat like metal does'. I'm not at all scientifically-minded so that's just blind prejudice not a valid argument against silicon. I'll give the silicon a try if I can find the right size/shape in a shop.

Yes, I like these, too. I only have the bun forms at the moment but they work fine.

Of course Coop and Migros have baking paper. For sheets, get a silpat silicon baking sheet.
Otherwise for sponges (your cakes) line the tin with butter, roll sugar around the to stick to the butter, discard the excess sugar. Your sponges won't stick and will have that little Je ne sais quoi.

There's silcone and silicone. Lékué is a good brand to look out for. Just remember to put the cake pan onto the baking tray before you fill it with cake mixture
There's a non-stick baking spray (Backspray or Backtrennspray) that you can get if you don't want to fiddle around with butter and flour. You can get it in Migros, next to vegetable oils, fats etc., called Spraycook if I remember correctly.
I usually spray a little into a springform, cut out the baking paper into shape and it holds the paper in place well.

Does any one know where to buy wax paper like on the roll ?
Usually it is in the baking paper section along within tin foil in the states but I can not seem to find it except at Coop Bau & Hobby and three sheet are 20 CHF.

Europeans don't quite know about waxed paper so (just like baking parchment was something of a novelty to most home US bakers until recently)...I had a couple of rolls when I moved here and never really looked for it so I can't say I know but...it sounds right to find it in the B&H store for that price as it's certain to be a novelty here. Hopefully someone pipes up and proves me wrong.
A buttered pan with flour sprinkled on it works wonders
So true. Works for any cake or cupcake (muffin) pans.
However, I also recently bought sheets of greaseproof paper in MIgros. I use them at school for ironing the little plastic designs made by my class, to set and stick the plastic beads to each other. The greaseproof paper does not stick to the beads, and prevents the beads from melting onto the iron.

I have never had the pleasure of using American wax paper, but the variety here is far superior to the crap that is sold in South Africa.
Nicole, I would ask at the local super as to where the BACKPAPIER is, because in my experience it is displayed in some rather strange locations.
