May I reiterate that candy is unsafe to make with children because of the high temperature? That goes for caramel and toffees.

Fudge is OK. (I've a great one for Irish Cream Fudge, but it's for adults. ) PM me if you want it.

How about a candylike bar that tastes like coconut candy but milder?
(It was made by a teenage boy in my tiny baking class and his family loved it.)
Here it is:


Coconut Cranberry Chew Squares


Base: 1 cup flour
½ cup dessicated coconut
2/3 cup sugar
¼ cup molasses (Melasse in German)
½ tsp baking soda
¼ tsp salt
½ cup butter, softened

Topping: 2 eggs, beaten
2/3 cup sugar
¼ cup molasses
½ tsp almond extract or essence
2 tablespoons flour
1 tsp baking powder
½ tsp salt
2/3 cup dessicated coconut
½ cup dried cranberries
½ cup almond slivers or flakes


Base:
1. Preheat oven. Mix flour, oatmeal, sugar, soda and salt. Add butter and molasses and mix until crumbly.
2. Press mixture into greased (or baking-paper lined) 9”x13” (23cmx33cm) pan.
3. Bake at 350 degrees F (175 degrees C) for 10 minutes.

Topping:
1. Stir sugar, molasses and almond extract into beaten eggs.
2. Mix together flour, baking powder and salt and stir into egg mixture.
3. Add coconut and cranberries and mix.
4. Pour over crust, spreading evenly. Sprinkle with almonds.
5. Bake at 350 F (175 C) for 25 minutes or until lightly brown.
6. Cool and ice with lemon frosting.


Lemon frosting: Whisk 1 cup powdered sugar with 3 tsp of lemon or lime juice. Add a bit of milk or more juice to achieve the taste and consistency you prefer.

Try this recipe for Peppermint Bark. I've used it before and love it. It's very easy to make and is perfect for the holiday season. Hmm... if it turns out gorgeously, send me some via pm. Hehehe..

Ach, gone are the days of my mum yelling at my sister and I to "GO AND STAND BY THE WASHING MACHINE WHERE I CAN SEE YOU BOTH!!" while she worked on the boiling sugar mixture...

If you boil the cans, make sure you use an old pot as the glue from the paper will stick to the sides as a very sticky residue that I have yet to be able to remove. I actually prefer boiling the tubes because of this.

Ok well thanks guys all there sites, and recipes look yummy, but unfortuntaly i could not find most of the ingrediants. So no candy making for us. Oh well at least we had a trip to the coop my favourite place not

Don't the plastic screw-caps get a tad soft from the (long-immersion) heat?!

But I can appreciate the tidiness of squeezing out the resulting caramel from a tube.

Raincheck taken. What kind of candy were you trying to make where it's so hard to find ingredients? And I am with you on the Coop shopping experience ... helps to drink a shot or 2 of whisky before heading in there.

I agree with you on this. I should have posted on the "scars" thread. My grandmother once burnt me* with hot sugar one time when she was making candy. And this is the reason I won't share her recipe!!!

Please find a recipe that doesn't include hot melted sugar.

Remove the caps, the tubes are sealed with metal and the seal has to be popped with the end of the cap once cooled. (I hope that makes sense)
