May I reiterate that candy is unsafe to make with children because of the high temperature? That goes for caramel and toffees.
Fudge is OK. (I've a great one for Irish Cream Fudge, but it's for adults.

How about a candylike bar that tastes like coconut candy but milder?
(It was made by a teenage boy in my tiny baking class and his family loved it.)
Here it is:
Coconut Cranberry Chew Squares
Base: 1 cup flour
½ cup dessicated coconut
2/3 cup sugar
¼ cup molasses (Melasse in German)
½ tsp baking soda
¼ tsp salt
½ cup butter, softened
Topping: 2 eggs, beaten
2/3 cup sugar
¼ cup molasses
½ tsp almond extract or essence
2 tablespoons flour
1 tsp baking powder
½ tsp salt
2/3 cup dessicated coconut
½ cup dried cranberries
½ cup almond slivers or flakes
Base:
1. Preheat oven. Mix flour, oatmeal, sugar, soda and salt. Add butter and molasses and mix until crumbly.
2. Press mixture into greased (or baking-paper lined) 9”x13” (23cmx33cm) pan.
3. Bake at 350 degrees F (175 degrees C) for 10 minutes.
Topping:
1. Stir sugar, molasses and almond extract into beaten eggs.
2. Mix together flour, baking powder and salt and stir into egg mixture.
3. Add coconut and cranberries and mix.
4. Pour over crust, spreading evenly. Sprinkle with almonds.
5. Bake at 350 F (175 C) for 25 minutes or until lightly brown.
6. Cool and ice with lemon frosting.
Lemon frosting: Whisk 1 cup powdered sugar with 3 tsp of lemon or lime juice. Add a bit of milk or more juice to achieve the taste and consistency you prefer.
