For Zürchers, there's tons of the stuff on Uetliberg. Enjoyed some homemade bärlauch kräuterbutter atop a juicy steak at the weekend. |

Given that the temperatures are higher now, I'd expect that Bärlauch have begun to sprout. Anyone seen/smelt anything yet?

| | | Re: Wild Garlic (Bärlauch, Ail Sauvage) | Quote: | | | | | Is "Bärlauch" not "Ail des Ours" in French? Not sure if there's a difference between "Bear's Garlic" and "Wild Garlic" or not, but I'm very pleased to read that we've started to see it sprouting - I love the stuff! Goes amazingly chopped up in a salad dressing.
EDIT: I do have authority on that last sentence - my partner is French, so his specialities are salad dressings and different types of garlic. | | | | | Ail des ours, ou ail sauvage - all the same thing. Plenty up here in the Jura every year- but haven't been to look in my fave place yet. You'll just have to come up and I'll take you.- we are not too far from Neuch.

Go for walks in the woods and beside rivers and streams to look for those garlicky smelling leaves. | | This user would like to thank argus for this useful post:

I spotted it in Oerlikon yesterday. Gave a leaf a rub, just to be sure.

I picked Bärlauch some 2 weeks ago, and chanced upon a market selling it too. I didn't realise they were as expensive as Porcini.

Today man, dog and I went to the riverside walks near Höllgrotte (Baar, Zug canton). Found a lot of bärlauch growing here and there in semi-shady areas. Plucked with our fingers - pluck, sniff, pluck, sniff - enough for a meal for two (pesto and a quick stir-fry in olive oil) but had no basket, so we used a clean robi-bag found in my pocket. | | The following 2 users would like to thank argus for this useful post:

I work in the forests a lot and I see (and collect) all the time :-)
If you really cant find any, you can go to your local coop or migros and get a "tome vaudois" with ail d' ours in it. delicious!

At 900m, not quite ready yet. And 'morilles' not coming up as it is far too dry - after the next downpour, if it happens, they should show their pretty little heads. All fingers crossed.
Then it will be the turn of St Georges mushrooms- we have a big fairy ring of them in our back field - hurrah.
If anybody is in the Valais and wants to know the location of another big St Georges mushrooms (near Les Haudères) I'd be happy to give you the directions- but they won't be out before mid June up there.

Yeah some rain is critical. Looks like Saturday at the earliest... maybe some Sunday foraging on the horizon... |

We have a lot by in our drive. So much so that we get poachers. It annoys the hell out of me, because they never ask for permission. If they had, the answer would be yes, of course. Can't stand bad manners.
If anyone is around my area, you are very welcome to some. I've just picked enough to freeze .

Ten days ago, we picked some young Bärlauch by the river near Höllgrotte, Baar, in Zug canton. Made some pesto mixed with toasted pine nuts, basil leaves, olive oil and grated hard cheese - very delicious with spaghetti!

Argus that pesto sounds delicious, could you post the recipe? I'd love to try it, there's tonnes of Bärlauch round our way at the moment.
