Where to buy Sushi Tuna (bluefin)

Bit of a shot in the dark, but does anyone know where I can buy sushi tuna? I've left this a bit late but we're making sushi tomorrow for quite a large group and I'm a bit unprepared.

Thanks for any help

p.s. I'm Based in Basel but have visitors from Zürich coming so they might be able to pick any up from there.

I was at the fish markets in Tokyo and there looked to be plenty, literally, lying around.

That's because they take fish from all over the world and pay tens of thousands for a bluefin.

Try yellowfin. There's a good fish market in Dietlikon outside of ZH that I'm sure would have some of that, albacore, or both.

it is a tricky one in switzerland, but you have to ask the fishmonger. Even the reliable places will only sell sushi fresh fish on certain days (i.e. the day of delivery). So ask the fishmonger whether it was delivered today.

The fish counter at the main coop near me is good, but you have to ask the right person on the counter, and can only get it on two days a week.

well it was a Vegan friend who suggested making a sushi supper, but I felt I couldn't leave my other meat-eating friends out in the cold.

If its this complex to get hold of we might just skip the tuna it all together.

Be very, very careful when buying fresh fish for sushi. If it is not sushi-grade, it is not intended to be eaten uncooked.

Yes, Jelmoli and Globus near the Bahnhofstrasse sell sushi-grade tuna. I have heard other some fish departments claim the fish is sushi-grade, though I doubt they know if it really is.

Migros has been selling yellow fin from the Indian Ocean, maybe not the same quality for sushi?

Hey Ric, you can probably get some at Globus, but it will be very dear! I usually get tuna for tartar at the coop near Spalenring, but I am not sure if it is safe enough for eating just as sashimi.

Hi nksyoon,
Yellow Fin from the Indian Ocean is perfectly fine for Sushi as long as it has been caught, frozen immediately, stored and transported under strict guidelines and required temperatures. I have a friend who is in this business.

It's not valued as highly as Blue Fin but eats very well in my point of view. A 'freshly frozen' Yellow Fin is far better than a mishandled Blue Fin. The key is to get fish in the best condition possible. That is Sushi!

While there is not a set standard for qualifying fish as sushi grade, the difference is whether or not the fish has undergone a parasite control process. This involves freezing at particular temperatures for particular lengths of time. The colder the freeze, the less time required to freeze it. Without this measure for controlling parasite, it shouldn't be considered sushi-grade.

I can't imagine parasites adding any nutritional value... but I've heard they can get very nasty in a human body. So please beware.

Practice Safe Sushi-ing!
