Forget about the expensive imported brown sugar here.
Just take a cup of plain white sugar and add 2 or 3 tablespoons of Melasse (molasses) which you can find in a jar for CHF2.60 in Migros near the honey and jam.
By the way, this Melasse tastes great with pancakes and yoghurt. |

i can't seem to find brown sugar (dark preferably but light will do!) anywhere! i've tried coop, migro, manor, city coop. the staple of all my favorite autumn recipes and all i keep seeing is raw sugar, but not that sticky, packed, delicious darkness that is brown sugar.
any ideas? |

Also from Lausanne you can try Aligro ( www.aligro.ch) which has a store in Renens. They sell Candico brown sugar.
(For those not in the know, Aligro is a bulk-buying place with three stores in Geneve, Renens/Lausanne and Sion, which is basically a wholesaler but is open to anyone.)

Hello..
This is my first post, so 'hello everyone  ' and thank you for creating such an entertaining and informative place to visit!
I've been here 18 months and go back to England to get Brown Sugar... it's a bit of a long trek but worth it
Seriously though, I found some dark muscovado in a little organic food shop, was over CHF8 for half kg but after doing without for nearly a year it was worth every rappen.
I live in a really small village, and if it's possible to find it there... well, I'm sure you will find it with a bit of scouting, just look off the beaten track - the supermarkets just don't seem to stock it. Wish you luck.

A good substitute for brown sugar is to add 3 tbs of molasses (Melasse*) to a cup of raw sugar (Rohzucker*). It works well in soft, chewy gingerbread cookies.
*Migros sells both.

I use the MIGROS Kandiszucker and just grind it in a blender.
It seems to be fine for making chocolate chip cookies and such.
I have not had luck finding Cream of Tartar and Baking Soda in the "usual" packs. It's too expensive (for me anyway) to buy those little pepper size packs.
I have managed to order them from friend going over to UK or USA where its sold in small cans. I use a lot of Baking Soda for pancakes, etc. And you can easily make homemade Play Dough with Cream of Tartar.

try www.peace-foods.ch or if you are near Baar, you can go to the peace foods bakery and purchase brown sugar there. They sell dark and light. As well, they sell all different types of pantry goods such as real vanilla extract, belgian and swiss chocolate ships, cake flour... the list goes on.

*Migros sells both. | | | | | Gingerbread cookies are supposed to have molasses. Don't try this with chocolate chip cookies. I did and had to throw the whole batch out. It was that awful.
I've baked 4,578 batches of chocolate chip cookies (a horrendous habit of mine) and am a faithful fan of just using Rohzucker in place of brown sugar. Use the large crystal kind because the finely ground Rohzucker often turns to stone in the package.
Tip: Don't bake the batter right away. Let it sit in the bowl for an hour for even better cookies.
