I have signed a contract with a health insurance company, but I have not received my insurance certificate yet. The health insurance authorities in Geneva where I live are writing me letters where they demand to see my insurance certificate now or else they will just choose an insurance for me plus give me a fine. I have told them that I have already signed a contract with a insurance provider and I have sent them the confirmation letter where it says that I they have accepted my application. They will need a week or two to produce the insurance certificate. But this won´t do, the authorities say.

Does anyone know how I get out of this mess? According to the law, I have three months on me to get an insurance, and that is like 3 weeks from today.

You should have three months. Have you asked them why they seem to think differently? Either way, I would call the HI company and ask them what can be done to satisfy the authorities. Maybe they can call them. Neither I nor my GF had a problem with this, but we probably had our insurance confirmed earlier.
