Dani, since you are a vet nurse - and assuming that you are not going back into a traditional practice - why not start a pet care service focusing on animals who need special medical attention?
There have been several threads over the years where a poster is frantically looking for short-term care for an elderly pet or a pet with a chronic condition. Few kennels here will accept animals who are not in the peak of health - and some of those that do are not really set up to care for an individual who needs regular meds, monitoring, or who requires a schedule that differs from the kennel routine.
From my long search for a qualified dog sitter, I've found that very few private sitters have the knowledge or experience to care for animals with 'special needs'. You could do quite well by offering a unique service.
FYI, caring for dogs requires certain educational qualifications and registration with the cantonal veterinary office - but I would think that your UK vet nurse qualifications would be accepted. The BVet would be the folks to speak with. Caring for cats or other critters does not need any special licensing.
