Why do companies look for your permit at an interview?
Was told due to the factr of being an EU citizen I have 6 months without needing one and when I'd find work, they would supply it for me.
Have gone to 2 hotel job interviews in Geneva and have been told that due to the fact I don't have permit, they cannot give me job!
Am getting really annoyed now, anyone with an idea how I can get job in bar or restaurant without this hassle or have any kind of position open that I can maybe do?

They had no idea what they were talking about. You can stay three months as a tourist. To work legally anywhere you need a permit.

Swiss embassey in Ireland.

To look for a job you do not require a permit or authorization.
You do, however, need a permit to live and work in Switzerland. Once you
find an employer that will hire you and support you.... that is the first step
to getting the permits. Next is the paperwork. Then the approvals. After

I only visited for a few days as knew I needed to get residents visa and can get appartment until I have job!
Job is first thing to get and everything else will fall into place behind it!

employers still have to apply for a permit if they want you.
if you already have a permit they have nothing to do except register with the tax office that you work for them.
If you don't have permit then they have to go through the process of getting one for you adn registering you in teh tax office too!
sounds like these employers don't want the hassle of applying for a permit for you in this case. Also they would have to declare what you will be earning etc etc they have to be VERY legal about it!
so in the bar and resto trade working on the black or even quasi leagal is more difficult when they have to go through that application process. you could argue that they would draw attention to themselves!

I can speak fairly good french and thats why I checked in Ireland before I left there with the embassey by phone so i would'nt make an error as I had'nt spoken in french for months!

Irish, I think we came over on the same plan, except you are EU, and I am not.
As pertaining to EU residents the laws have changed in the last year. It's why you have a flood of German visa seekers, something like 5000 new visas for the country alone per week. EU residents can change status and re locate here as locals more easy then any one else.
I had the same problem with the Permit deal, but it is really quite simple. More then likely your possible employers have never done this before, and think you are not able to get a permit. All they need to do is go to their Gemeindehaus and ask for the proper forms, and it can take a couple weeks. If you are in Geneva probably quicker. They probably need some one to start right away and fear you won't be able to for months.
