Where do you buy baking pans

I need to replace some of my baking pans. Right now, I need to get a spring form pan as my old one is looking a little nasty and I'll be making a chocolate chestnut torte later this week. I have seen them in the coop, in globus, but where do people buy good quality stuff for use at home.

The other thing that I want is what we'd call in the US a jelly roll pan. It's a flat, shallow baking pan with sides, used to make a thin cake, roulade, or swiss roll (so i can make a buche de noel next month).

I have to admit that I'm used to ovens with wire racks, and here each of my ovens has like 3 or 4 pan-like things to stick inside the oven. They work great for a lot of things, I've just not used them for baking. I suppose i could, though....

I'd be curious to know where people shop - if it's a regular store, or online.

Sibler has some very nice baking pans - pricey, though.

I've never ordered on-line from them, I usually go to the store in Zürich.

Kaiser Backform also makes some good spring form pans; you can find these at a Manor or Globus. Such as their La Forme Plus series:

I've not seen a sheet pan here. Odd, because one finds roulade type cakes here in every bakery. I cheated, and ordered from Williams-Sonoma in the US - check your oven size first, though!

I looked at your website before I posted. Very cool stuff and if I actually decorated what I did, I'd be all over it. I'm afraid I really want the plain old boring regular shapes.

That's fine with me. Then Manor or Coop City are your best bet. Look for brands such as Kaiser for teflon-coated and Lékué for silicone.

I have some Leuke already, I really like the stuff. I don't have any bakeforms, though. I do have an angelfood bakeform that I got in the US, and I love it.

Apparently the guy who designs Leuke is from Luzern, but the company is in Barcelona, I believe. Anyway, I have a steamer insert and something that I can only describe as a sort of envelope. It has a weighted cover. Stick a piece of fish inside and cook in the oven. We use it to cook salmon in the oven, just a little salt and pepper and it's really lovely.

Just spent 2 hours taking steam oven apart and removing calcium deposits, and am going to Manor on Wednesday to look for forms. Ready to bake.

Are there brands without teflon that you recommend... not so fond of teflon.
