Weekends are hard to arrange as places usually aren't interested in groups descending; they have enough business as it is. It's hard enough on weeknights.
But don't let anyone tell you we're here on Earth to do anything other than p**s around, so I'd say make it an event on the social calendar, determine a minimum to make it work - say five people? - than off you go. By using the RSVP function on the calendar you generate buzz and overview for the undecided, and you'll be surprised how many people would dearly love some weekend company but are too shy to get off their behinds!
One element to consider is if the numbers get double figured, you may wish to call a place ahead and book a corner, otherwise you're left with a sprawling group and people don't really gel.
In my humble experience it's best to say where and when in advance. People are more likely to follow than lead
