It sounds like a lot of fun and right up my street, but I've not been in my apartment for very long and haven't yet invested in a dining table etc.
I don't want to invite people over to sit on the floor, eat food with their fingers and have a bottle of wine in the middle of the group with eight straws sticking out of it.

Great idea! I just wish that it was a bit closer to home so that I could join. It seems as if all of the really good foodie stuff (the shop tours, etc.) happen in Zurich.

Have you though about using a Gemeinschaftszentrum? It would spare the hassle for those who don't have a big dining room, are inexpensive to rent and tend to me centrally located. I may be a bit presumptuous in setting the rules, but we have to start somewhere.
The idea is home cooking and banter. Is not about who has the fancy gadget / big dining room / silverware etc. Is not a competition on who's the best cook. It shouldn't be an hassle to organize. Is not "Come dine with me", there are no prizes for showing off, so I'd hope we don't need to set a set an even playing field among us. Is not catering.
Is done in good spirit to bring like-minded people (God I hate that phrase but I can't think of an equivalent one) together around a dinner table with good food on it.
If the host will only able to accommodate, say, 6 people and there are another 10 guys that we don't have room for, then there will be 2 dinners / lunches organized by 2 hosts....
this is still very much in the infancy, and I'm sure that it will evolve from this starting point, you never know, we may even reach critical mass where we'll decide that yes, we need a big room and proper equipment. On the other hand this would turn what's starting as a social club into catering / banqueting which I think would defy some of the principles of the Club (honestly, who's going to cook for 20 people?)
