Dinner last night was a home made chilli

(for 2 people)
-1 onion
-2 tomatos
-small tin kidney beans
-small tin sweetcorn
-teaspoon chilli powder
-teaspoon mixed spice
-bunch of mint
-bunch of coriander
-1 lime (juice of)
-iceberg lettuce

Finely chop the onion, fry in a small amount of olive oil. Add chilli powder and mixed spice.
Finely chop the tomatos and add
Add the tinned goods
Add the mint, coriander and lime juice
Let it "blip" for about 20mins

Serve in the lettuce leaves as mini-wraps!

It was bloody lovely - spicy but with a good mint hit - and fantastic served in lettuce leaves as wraps (instead of a wheat based product).
