I got my learners permit about 2 months ago & I'm happy to help you - I've been there
So, to answer to your questions:
1. Driving teacher: my driving teacher is just simply what you need. He speaks English & he is endlessly patient. He is just wonderful and after your first drive with him you'll know what I'm talking about. Here is his website:

2. As far as I know (& that is 99.99% - information from August 2012) in Switzerland there is NO mandatory number of driving lessons you have to do. It's all up to you - to take or not to take an instructor. The fact is you can't learn on your own the rules. I mean, ofcourse you can, but it'll last looooooonger....
3. A place to practice... I live in Bonstetten & close to my house there is a factory. On Saturday evening and Sunday noone is there working, so all the space is free to drive around. It's not huge, but it's enough to start somewhere where there is no traffic.
