I love Evolène, go there every year for a week. However it does not have really spectacular scenery (great scenery, but not spectacular).
Zermatt, of course, is Zermatt, with the Matterhorn and a crowd of other 4K peaks. It is
very rich touristy (more jewelers than outdoor stores in town), and is a total contrast to Evolène, which made me smile at their juxtaposition in Odile's post
For better views than Evolène in a less touristy environment than Zermatt I would suggest Zinal, at the foot of the Imperial Crown.
