Maybe you're forgetting about the recently-opened Loetschberg base tunnel? I don't see how you could beat the train time of 3 hours 15 mins in a car. Plus, even if you take the car then you still have to switch to the train for the final 5 km or so.
Zermatt is certainly nice to visit, even if only for a few hours, but also for a day or many. Last summer, we took the cog train up to Gornergrat, which is above 3,100 metres - not much lower than the Jungfraujoch. I took a series of photos and turned them into a 360 degree panorama with the mountains labeled, which you can see

here. A friend of mine has taken the cable car from Zermatt up to the Kleine Matterhorn, and said that the view was very nice and the ride there was pretty impressive because he got to sail high over the glaciers below.
As others have said, you can easily spend several hours just exploring the town, the shops, and the restaurants. If you're feeling more adventurous then you can try out one of the winter walking trails. You'll be walking along on groomed snow, and although many people feel the need to wear snowshoes often a reasonable pair of walking/hiking shoes is all that is really necessary. The Zermatt tourism website should have a map with these "winterwanderwegs" marked.
