I would go to Dijon.
Nice city, good food and you will see the Jura and Burgundy.

What about Baden-Baden? It's a very nice city with a very special atmosphere. The springs there are beautiful, you can walk up to the new and the old castle and have a lot of cute hotels and restaurants.

I was disappointed with Dijon and found it rather grey and dreary. I much preferred it when we drove a little further south at beautiful Beaune (the capital of Burgundy wine).

Just been to Parma, Italy. Very nice traditional Italian city centre, good restaurants, bars and cafes. Small unique shops and not as touristic as some of the more known cities in Italy, However, because of the distance borderline for a one-night trip.
