Can anyone point me in the direction of a website which will tell me which Swiss resorts are already open and what the snow conditions are like?

There are several but I use www.skiinfo.ch, you could try there!

There are more than several I like http://www.j2ski.com with webcams, forecasts etc...

I tend to use Snow Forecast http://www.snow-forecast.com/ although the actual predicted snow levels can be optimistic to say the least it does give a good indication of temperature, wind chill and freezing level; plus there are normally links to the actual website of the resort you are interested in.
As you are based in Morges, you will be looking at the following resorts:
Saas-Fee and Zermatt are both open (Zermatt fully - I was there last weeked )
Verbier has some runs open
Champèry and Avoriaz open this weekend I believe (though you will likely have to park at Les Crosets)
Crans-Montana (and neighbouring Anzère) have limited slopes open this weekend and plan to open fully by the 19th.
Ovronnaz appears to be partially open as well.
TOP-TIP, you can normally add "tele" to a resort name to find the website of the lift company (e.g. www.teleovronnaz.ch)
If you're planning to go past Geneva into France then I know Chamonix is open - beyond that I don't have experience of that area..

Here you can find information direct from the resorts. Its updated at about 7am each morning.

Even our local Rothenthurm ski resort is open. My kids have gone skiing there three times already.
