Service however is not a technical but a personal thing. But indeed a personal and a cultural thing. In Italy or in the Arab World or in Turkey, to be in the gastronomy for centuries was something positive. In the Balkans however, not least in Communist Yugoslavia and other communist states, tasks in gastronomy were NOT seen positively but rather like slave labour.
