But in some track day they ask for plate number and insurance (even if we know that the insurance is useless in those cases). Also, would be much easy to move around Europe with the car (instead of two), having a EU plate.

I was thinking: what if I buy the car with Swiss plate, I heavily modify it (so becomes illegal), but I never drive it in Switzerland, only ouside? To move it outside and to bring it back I can use something like this:
