The risk to the kidneys is prevented by the carb load after every 5-6 days of ketosis. I can go into detail in this, but its not the right place. You are wrong about the liver as well. Ketosis is actually beneficial to the liver due to the increased intake of Omega 3 fats and probiotics / fermented foods.
"prevented" is the right word - you need to "do" something about it, otherwise the stress ensues. Ditto for the liver: unless you compensate with "increased intake" other foods, the liver will be stressed (pls note that I didn't say it will fail or shutdown or whatnot).
Being a "ketosian" works optimally if you follow rigid guidelines and if you listen to your body or unless you are medically monitored (e.g. pro athletes).
