I would up going to Huwyler (

They normally do their pig slaughter on Monday, so it helps to call at least a week in advance, but they had some cuts on hand that I wanted, and I think the guys was pleasantly surprised to sell me 300 CHF worth of meat. The place doesn't look like much, but it seems like they can produce damn near anything from the back. Would definitely go back.
