That is just the 'coeur' d'artichaut- but you can also cook the whole thing, once you've taken the tougher outer leaves, and pull leaves one by one once cooked and dip the fleshy part into mayonnaise or other dip and suck off the soft flesh. The popular and much simpler way to eat artichokes.
