Re: Any Sauerkraut/Choucroute recipes ?
For me the go-to site for more or less local recipes is chefkoch.de.
An extra simple example:
500g Spätzli (Chnöpfli in swiss German)
3-400g Sauerkraut (white, sweet)
100-150g dairy butter
Prepare Sauerkraut and Spätzli as prescribed on its respective package, let any liquid drip off the Sauerkraut (if applicable) and heat it in the microwave if necessary. Melt the butter in a pan, high-ish heat so it turns a nice golden (perhaps a bit brown) color (too much heat if it "smokes") and pour over the Sauerkraut/Spätzli mixture. Done, serve.
I love bread to go along with this. You can add roasted onion/ham and a lot of other stuff, but I prefer this very basic make.
