Moving to Zurich in one month - picking up Health Insurance Plan


Together with my wife we are moving to Zurich in approximately a month.
We would like to pick up health insurance as fast as possible, however we have no residence permit yet. We are both EU citizens.

As it seems residence permit takes few weeks to be obtained and we intend to apply on day one.

My question is, can we pick health insurance before that as it appears residence permit is required for almost all possible subscriptions (mobile, bank account, etc)?

I read that in the first 3 months after arrival we are automatically insured but once we pick up health insurance we backdate the payment from the moment of our arrival. If that is the case what is the process of contacting a doctor in case of need before having the actual health insurance plan yet?
