Re: Disappearing ginger nuts!

For the nerds, especially if you notice a difference in taste/smell when cooking or baking with fresh vs dry ginger:

Fresh ginger has a lot of gingerol while dried ginger a lot of shogaol. When ginger is heated, some of the gingerol is still present, and some of it is converted to shogaol and zingerone.
