I tried making the BBQ pork buns myself from the grocery store - but the result wasn't good - not like the real thing :-)

You are right - though they come in many different flavours (as you know) and the "bau" would be pork (since there isn't an official way to Romanise the characters I guess we can spell them however we want). Thankfully I haven't had "gau" yet - but I have heard a rumour that there are a few restaurants (not Chinese) that serve "gau" illegally. (shudder). A bit cryptic I know...

15-20 mins - What are they doing? Killing the thing first? I guess I'll have to take a good book... Well I suppose that the real yum cha is supposed to take place over several hours, but I've never done it like that.....

Keep those tips coming (don't be afraid to post different subjects in different threads - for example different types of restaurants). I saw the post you did on expats in Zurich about why you were going to post here - ouch. But I agree with your sentiments!
