Is Shrove Tuesday a day for pancakes outside the UK and Ireland?

In the UK I think lemon and sugar are de rigueur.

Here's a simple recipe:

8 heaped tbsp plain flour
2 large eggs
500ml milk
pinch of salt

Mix together and then let it rest for half an hour.

This is Shrove Tuesday, so let's keep it simple and use the traditional British pancake. I love fluffy American pancakes, but I'll save those for a weekend brunch. I also love things like French buckwheat crepes, but again, I'll have those as a light lunch.

The use of a raising agent in a Pancake Day pancake is an abomination.
