You should be able to open a bank account with a hotel address, though I would recommend setting up an appointment in a branch rather than trying to get the account openend online - and take your contract with you just to be on the safe side.
You have to get registered within 14 days of arriving, even if you live in a hotel. In theory you have to let the Gemeinde know every time you move - but speak to them anyway.
You will be paying tax at source which means they estimate the tax due based on your salary and your employer will deduct it from your wages. You will probably be filling in a tax return at the end of the year where you will be jotting down all addresses. Save yourself some hassle and get a pro to do the tax return for about 100 francs - you'll see lots of ads in the paper around the time the tax returns are due.
