Let's build a brewery

Hello Beer Lovers,

I've been giving a lot of thought recently to building a small regional brewery or brewpub. I've been passionate about beer and homebrewing for over 12 years and the idea has been in the back of my mind for just as long. I'm currently estimating the viability of multiple possibilities and beginning to research the different aspects. I understand the implications of such an undertaking and it's become apparent that the endeavor may be more well-rounded, enjoyable and progressive with a partner(s). I thought I would put this out here just to see if there is anyone out there with similar ideas who would be interested to talk making-beer over a beer. At the very least maybe I'll find another homebrew buddy.

I could be interested in this, I have never brewed because I don't have the space but a friend of mine and I looked at starting a brewpub in Zurich 3-4 years ago. The thing that stopped us was that we couldn't find somebody with brewing experience willing to invest time/effort and money into it.

Starting off a small brewing operation would be ok, but a brewpub would obviously be a serious investment.

I'm not sure what scale your planning on, but the information, including a bit of history, about this micro brewery may give you some inspiration. A delicatessen here carries some its produce. The fermenting vessel in the pictures does look a bit small for all the activity depicted, but there may be something a bit bigger, which is not shown.

Hello Nigelr, I just sent you a PM.

Hello me.anon, thanks for the links. Judging from the pictures of their Braueule this is still homebrew scale, perhaps 1/6 or 1/4 BBL. I'm also not so sure if LP gas indoors is very safe. Nonetheless inspiring. I was considering perhaps a 3.5 to 7 BBL system. I did see the post from swissbob, but he appears to have posted as a guest, or is no longer active. Anyone know how to contact swissbob? I did find another member here who would be interested, except our locations are too far apart.

I could be swayed into this. Strangely enough am in LA right now visiting vineries and a couple breweries as i have ambitions for the food and drinks industry. how can i get in touch.

Here is an example of a popular restaurant / brewery in Bern which I have often visited together works colleagues. http://www.altestramdepot.ch/htm/e_brauerei.htm

And here is one across the border in Konstanz which I have visited a couple of times on holiday. Here, all the fermenting vessels are on an island on the restaurant floor. It looks very effective, although it may be more of a decoration.

I would look into using shared facilities with another small brewer. I think there is a small brewery in Uetikon am See. A friend of mine started there and outgrew the facilities, he then outsourced his brewing until he set up his own brewery but was taken over in the meantime. http://tel.search.ch/uster/ackerstra...rei-uster-gmbh in Uster does a lot of small batches so maybe a starting point.

Thanks for the suggestion. Another EF member had suggested the same. This sounds like a good way to get started without investing in the brewhouse. Are you saying your friends brewery name was purchased by another?

Have you ever seen something like probrewer.com for europe/ch? I've found various stuff for agriculture but nothing for brewing on a professional level...

The below is from a KulturLeben article in late 2014. It says that the number of breweries in Switzerland increased during 2014 by 63 to 473.

At some point there is likely a saturation point for small breweries:

OTC-X Research wrote a brokerage report on Brauerei Falken of Schaffhausen last year. The report contains an overview of the Swiss beer market, which I've summarized:

The Swiss beer market is heavily dominated by the two big players, Heineken and Carlsberg, with 75% market share, which they acquired through the purchase and closure in the 1990s and 2000s of numerous mid-sized Swiss breweries. Three multi-regional brewers, Schützengarten, Locher and Granador, control the next 10%. A dozen regional breweries, such as Falken, have the next 5%. The last 10% is the realm of the more than 400 small and micro-breweries.

The report also presents the fact that beer consumption per capita in Switzerland is flat to slightly declining (2003: 58.7 liters, 2013: 57.2 liters). Additionally, domestic production has declined from 3.665 million hectorliter in 2003 to 3.370 hl in 2013, while imported beer has increased from 668'486 hl in 2003 to 1.225 million hl in 2013.

Thanks for your input. Your information is pretty much equivalent to what I have found from Swiss and European brewers guilds. The statistics as they are do not seem enticing with stagnant demand and increasing competition. I am however, not discouraged. Increased imports could be interpreted as dissatisfaction with current domestic supply, or on the contrary lower prices. I think one large challenge is distribution and in bars the larger breweries with existing exclusivity contracts.

Hey Surfmase, I sent you a PM.

I'm in the Fribourg area and getting my head around the idea of a brewery. From what I have gathered it makes little sense to go the Nano route, and I don't have the $$ for something larger right now. However, I have potentially one other person interested, and may be able to organize a brewmaster with some experience… but that's only if things get moving forward. Renting capacity from an existing brewery is surely a good way to start out. Right now I'm scouting and getting informed, looking for others that could be interested and willing to put some time into this with me. Would be happy to meet up and discuss further... over a cold one, of course.

I welcome new microbreweries, wishing there were more in central CH...

However, it seems like the Swiss are so scared of change and reluctant to try new things that IMO the main challenge would be in creating demand. From what I can tell (with my very limited exposure to the bars, mind you) the bars/restaurants/beitzlis (here in Luzern) all serve Eichoff because that's what people drink- it's what they've always drinken, it's just 'what you do'.

..though I can't imagine piss tasting much worse.

Maybe a brewpub would work out better than bulk/wholesale distribution?

It's certainly one of my fears. Cardinal is the beer in Fribourg, and they also all drink this crap here. However, there are some micros that are slowly trickling in, www.fri-mousse.ch is just one example that shows up at local stores, COOP, etc. Mindy you, they've been around for a while. There are a few others as well. There's even a guy in Alterswil (a town just next door from Fribourg) that's brewing in a garage and distributing locally (www.fleischundbrau.ch). And it was not so long ago (20 years) that the situation in the US was exactly the same as here. Everyone was drinking Coors and Bud and micros were barely around. Now there are thousands of them, and there seems to be room for all. Anyway, I'm listening to what you're saying… I kindly hope that you are not correct, but your point must be taken seriously when figuring how to distribute.

I have related questions about the laws related to brewing and sales. Specifically... what are they?

For example: What are the requirements for the brewing facility? Labelling? Taxes? Surely someone can not just just brew and sell it? And sales to consumers (say, at a local x-mass market) vs to a restauraunt vs through a store?

I have only found laws on-line about making spirits, which are very easy to find - but what are the laws around fermented beverages?

For anyone interested, the Spirts laws are here (and translated into English, too, via the upper right corner): http://www.eav.admin.ch/ No mention at all about beer/wines.

Anyone have any knowledge about this? I wrote the EAV via the link, above, but so far, no reply.

Bob however left the EF and deleted his profile after getting involved with the politics after what happened with Mark and the running of the EF etc... so its not easy to find his threads but i know he set it up in Rapperswill but was a lot of hassle to keep it running. i think Mike was involved at some point (GrumpyGrapeFruit)
