The level 2 class is more of a workshop, where each student gets to practice and work on what they want or need to. The class is small so I can give each person close attention.
The design incorporates several options and you get to focus on several of these areas or indeed others that may be are important to you and your level of skill.

Tempura Prawn
Create your own
Nigiri Techniques with seaweed bands or chives
Seared Tuna with chives
Salmon with spring onion
Eel with sauce
Omelette with daikon sprouts
Fish Preparation & Cutting
Sashimi cut
Sushi cut
Tataki cut

Special Dishes
Seared Tuna with black sesame
Salmon tartar with caviar and quail egg


Japanese food arrangement
Creative cutting techniques for vegetables, rolls and traditional Japanese decoration
We will also work with Hamachi Kingfish.

Price is 160Chf per person or 280Chf per couple. To register for the class, send an mail to, helena@sushifusion.com or call 044 912 02 34. If you would like to get a group together you can choose you date and location. Minimum 8.

The thing with sushi is not how to make it, but rather where to find the fish that is edible raw. I always have trouble finding it.

I would love to do the course, but it's too expensive. This amount of money means a weekend at a nice hotel somewhere in Ticino or Romandie or so. Or a flight to London.

Hi armandair,

Braschler's Comestibles in the VIADUKT Market have an excellent selection of fresh fish for sushi.
They will even slice it up for you then and there, put it on a plate for you and give you some ginger, wasabi and soy sauce plus chopsticks.
I paid less than 15CHF for a large plate of mixed tuna and salmon sashimi from them the last time I was there.... YUMMY !!!

After you get your fish for your sushi you can pick up some yummy british cheeses from THE BRITISH CHEESE CENTRE, some steak and guinness pie from THE PIE SHOP and if you are there on a Friday or Saturday some lovely shortbread from the QUEEN OF CAKES.
